Title: Chinese Chicken and Walnut Salad
Categories: Entree Chinese
Yield: 8 Servings

  Dressing
1cCorn oil
1/2cHoisin sauce
1/2cSoy sauce
1/2cRed wine vinegar
1tbGarlic -- chopped
1tbGinger -- grated
1/2cSesame seeds
  Salad
1bnSpinach
1/2bnNappa or Chinese cabbage
4 Whole carrots -- julienned
1 1/2cWalnuts -- coarsely chopped
1 Sweet red pepper --
  Julienned
4 Whole scallion -- thinly
  Sliced
2cSkinless boneless chicken
  Breast -- cooked and
  Shredded

Combine dressing ingredients and blend well. Refrigerate. Wash spinach thoroughly and remove stems. Slice into 1/2 inch strips. Wash and core cabbage. Slice into 1/2 inch pieces. Dry and crisp in the refrigerator.

Combine greens and remaining salad ingredients in a large bowl. Toss well. Add dressing to taste and retoss. Reserve dressing may be stored in a covered glass container in the refrigerator.
